Petit Four / Butter Cookie Forming Machine

Construction: Machine made of food-grade stainless steel. All parts in contact with dough are made of copper and compressed aluminum or food-grade cast material. Operation: Dough is placed in a 56 kg capacity hopper, then the desired program is selected on an external screen with graphics and size settings (adjustable on request). Trays are positioned uniformly and operation starts by pressing the start button after selecting the required shape program. Molds and programs: - Sablé (wire-cut): Several shapes available such as heart, star and 'brazq' style; any mold can be custom made on request. Sablé cutting is done by a wire controlled by an air piston that operates only after confirmation via the screen program. - Filled (Fille): Uses a fixed-form mold matching the selected shape. The air piston is not used; filling is performed at a steady rate and duration appropriate to the shape. Mold form can be customized on request. - Fingers: Produces elongated finger shapes using the same or different mold; can be operated with or without the rotating head. - Rotating head: Rotates the dough while extruding; can be used with filled-finger molds or skewed molds to form ring or biscuit shapes. Any shape can be customized on request. Other features: PLC-based control system. Stores up to 400 programs with settings.
